Oh, yeah. Taco bowls. That traditional Cinco de Mayo dish.
Yesterday was Star Wars day, May the 4th be with you.
Today, Revenge of the 5th. (or tomorrow, Revenge of the 6th, whichever sounds better to your ears)

Happy Doce de Mayo!
No. It is not too early.
Taco tuesday and Cinco de Mayo
crashed together today.
The taco places had huge drive thru lines,
that I eventually gave up on.
I stopped at a grocery, picked up a couple
of items, and made beans and rice tacos
at home. One pack Knorr spanish rice
mixed with refried beans and the usual
topping junk.
Yummy. And I have plenty of left overs
for the rest of the week.
