I have tons of cherry tomatoes and I had a few pounds of them that I needed to do something with so I found this deal where they slow cook them in the oven. I have mine at 275 I think…
Anyways, just wash the tomatoes and remove any stems/green vegetation, dry them off a little in a collander.
Take a cookie sheet or two and line it with aluminum foil and drizzle some olive oil on it (Some people have theirs swimming in olive oil, I just use enough to get some on the tomatoes and the pan.) Then cook them for like 3 hours, they’re amazing… like eating candy.
I read they’ll last 6 months in the freezer.
I’m cooking them a little bit longer than these…
